Curry Rice and Lentil Wraps

Very simple, very good! Make your own ginger sauce or you can find this one at Costco ;)


2 cups rice
2 cups lentils
1/2 cup cilantro
1 tbsp yellow curry (paste or cube)
1 can coconut milk
1 tbsp organic palm sugar
Romain lettuce leaves
Ginger sauce


Cook rice and lentils separately according to the label. If lentils are already cooked add them to rice once rice is done.

While the rice and lentils are cooking, in a small sauce pan, add coconut milk and curry and cook on low/medium heat. Once hot, add the sugar and stir until the curry and sugar is dissolved. Make sure the sauce gets to a deep yellow color! That way you'll know you added enough curry paste ;)

Next, just mix the rice and lentils, add cilantro, and stir in the curry sauce!

Top the lettuce leaves with as much or as little mixture as you want and dress with ginger sauce. Even add some pumpkin or sesame seeds for extra flavor and crunch ❤

I'm BAAAA'AAACK!!! New and Improved...

Since my last post, my life has changed so much. Broke up with my partner, reunited with my partner, then one year later had a baby with my partner. I've moved four different times and two of those times were into tiny houses on farms. Now I live in a two bedroom rambler, with my partner and our infant son on a small island in the Puget Sound in the Pacific Northwest.
I am no longer vegan (I know I'll get shit for this) but I guess I'm an aspiring vegan, or part time vegan, but I definitely indulge myself in meals sometimes that are FAR from vegan. Labels are weird, and I'd rather just be real. I'm writing this while nursing my infant and trying to think of the best way to explain all of this but basically, I'm just me. I eat this, I eat that, I eat what I want. But I always go back to my love for plant based eating. I'm too aware of the corruption in the food industry to stray from eating this way for too long. But sometimes, you just decide to forget, so you can eat what you want. Its a shitty thing to do but I do it, we all do it in different ways with different things.
Anyways, I'm just here to be real, and not only share my recipes with you but my life, because I feel being open is the best way to reach and teach people.
